We are building a new restaurant franchise based on three principles:
Our proprietary Information System (TolstoyIS) was developed in house to support our locations and franchisees manage business in an effective and efficient manner, thereby reducing operational costs.
Our plant-based menu caters to the growing international demand for plant-based foods. All of our dishes are created by award winning chefs from the industry. All of our foods are good for both your health and the environment, and most importantly, taste great.
Transparent business practices and processes
Our business is completely transparent – with our employees, customers, partners and franchisees as well as our competitors. We believe that sharing information will make our business better and facilitate the growth of the plant-based foods industry.
Our menu was built around the belief that vegan food should be fresh and delicious. That's why we focus on whole foods. We also feature seasonal ingredients when possible and are always looking for new ways to make vegan food more accessible and tasty. The result is a diverse, healthy menu with a little something for everyone.
What does this have to do with Leo Tolstoy?
The great Russian writer was a devoted vegetarian, who advocated for animal rights at a time when most of Europe had not yet heard of vegetarianism. The name of our company and the brand itself is a homage to the great visionary and the culture and food that raised him.
Meet our team
Chef de Cuisine & Operations Manager
Olivia is a half-Argentinian / half-Austrian plant-based chef who grew up as a citizen of the world — from Australia to the U.S. This helped her create an international menu for Tolstoy, inspired by diverse culinary traditions. She received her formal schooling as a cook at the Institute of Culinary Education in New York. Before joining Tolstoy, she was working in Manhattan under the supervision of Chef Dan Kluger at his restaurant, Loring Place.
Josef is the founder and CEO of the largest privately-owned Austrian restaurant and catering company: DoN Group. Tolstoy became part of the DoN Group on the 1st of October, 2023. 30 years ago, Josef opened “MAMAS” in Kirchberg am Wechsel. Juggling night shifts at his bar and his parents' pastry shop, he dreamt big. Fast forward to today, he and his team run restaurants, cafes, bars, and cater for events all across Austria.
Daniil is a former McKinsey consultant and skilled manager with previous entrepreneurial experience. At Tolstoy he brought people from different areas of expertise, backgrounds and nationalities to work together and make magic happen.
Rares is a full stack-developer, and he has spent the last several years developing process management apps for different Austrian start-ups. From this experience came his drive to optimize processes through software wherever possible – and that’s what he was spending his time on at Tolstoy.
IVAN DUBKOV & EVGENY SHCHUR
Ivan and Evgeny is a chef team from Russia, who achieved culinary recognition for their innovative plant-based cuisine. Ivan spent the last decade as chef in the finest restaurants of Moscow, and Evgeny opened the first franchise of the French pastry-shop L’Éclair de Génie in Russia. They were both instrumental in the creation of Tolstoy’s menu concept.
PATRÍCIA GOMES & LUÍS LIMA
Patrícia and Luís were Tolstoy’s Vienna-based architects with previous experience in the city of Porto. Their work spans a broad range – including public spaces, interior design and housing projects – with an approach and style that embraces clean lines and light. They were responsible for Tolstoy’s overall architecture and design concept, which brings elements of color and brightness to our space, reminiscent of their home country, Portugal.

As of October 1st, Tolstoy became the newest member of the Austrian gastronomy family of Josef Donhauser.
